The 12 Days of Christmas Recipes

Tex-Mex Dip

This recipe is definitely a family favorite, especially my Pappy's. It's a simple, yet tasty taco dip that is always a big hit at any party! Our Christmas "Eve Eve" night wouldn't be the same without it!


1 can of refried beans
1 8 oz container of sour cream (I like to use lite or low-fat)
1 taco seasoning packet
1 small can of chopped olives (or slice up about 4 oz of whole olives)
2 medium tomatoes, chopped
2-3 green onions, chopped
cheese (amount is up to you! :))

I like to make this in a dish that has a lip so that people don't scoop it off the plate onto the table. All you do is layer up the ingredients! Start by spreading the beans on the bottom of the dish. The next layer is the sour cream combined with the taco seasoning. (You can usually just add the packet carefully to the sour cream container and mix with a spoon.) Add to the dish. Next, add the cheese in a layer over top. Follow that with the tomatoes, onions, and olives. The order really isn't important, whatever looks best to you!

Throw some tortilla chips in a basket or bowl and enjoy!
