The 12 Days of Christmas Recipes

 Chicken & Broccoli Casserole

3 packages frozen chipped broccoli (cooked and drained)
6 chicken breasts (already cooked)
2 cans Campbell's condensed cream of chicken soup
1 1/2 cups Hellman's real mayonnaise
2 teaspoons lemon juice
6 tablespoons of cooking sherry
1 cup finely shredded sharp cheddar cheese
2 cup of Pepperidge Farms stuffing mix crumbs
2 tablespoons melted margarine

Preheat oven to 350. In a 9x13in pan, arrange cooked broccoli in bottom of pan. Cut cooked chicken into small pieces, place over broccoli. In a bowl mix together the condensed soup, mayonnaise, lemon juice and sherry; pour over chicken and broccoli. Sprinkle shredded cheese and the stuffing crumbs over the chicken and broccoli. Melt the 2 tablespoons of margarine and drizzle over the casserole. Bake covered with foil for 1 hour at 350. Remove the foil and bake about 12 minutes until it is bubbly.

Linda O'Brien is my sweet mother-in-law. She is really thoughtful and takes good care of us. We are blessed to live very close to her and Dad. This recipe is one of Timmy's all time favorite dishes. He and his brothers devour this dish when she makes it. I'll definitely be keeping this one on file! :)
