The 12 Days of Christmas Recipes

Sticky Toffee Pudding

I've decided to share my sticky toffee pudding (don't let the name mislead you: it has absolutely nothing to do with toffee or pudding!). We tried this for the first time in Scotland, and when I came home, I had to replicate it. DEFINITELY a comfort food here: zero calorie cutting!



Ingredients:
1 cup of dates
1 tsp vanilla
1 tsp baking soda
5 tbsp softened butter
2 cups of flour
1 tsp baking powder
1/2 tsp salt
3/4 cup of sugar
1 egg

(These next ingredients are for the drizzle:)
1 stick of butter
1 cup of heavy cream
1 1/2 cups of brown sugar
(Optional) 2 tbsp of cooking rum

1. Preheat your oven to 350°. Boil dates for five minutes then drain and kill off the skins.
2. Return your dates to the pan with one cup of water, the vanilla, and the baking soda. Let boil, then simmer for two minutes (WATCH THE POT).
3. Soften the butter further in a mixer, then add the dates mixture, egg, and dry ingredients.
4. Kurt muffin tins generously with cooking spray or grease. Pour batter into muffin tens then bake at 350° for 27 minutes.

Meanwhile, make the drizzle:
1. In a sauce pan, combine butter, cream, and brown sugar with 3 tablespoons of water and boil. Let simmer 2 minutes (WATCH POT!).
2. (Optional) add rum.
3. After you have taken your pan out of the oven, pour sauce over "pudding" cakes, then bake an extra three minutes.

Serve with vanilla bean ice cream.


This one sounds yummy but a little too much for my skill level....someone who is a skilled cook needs to try this recipe and bring me a taste! :)






Sammi is my best girl friend in the whole world! We've known each other since we were tiny and have had the blessing of sharing many special memories and milestones together~classmates (3rd-12th), volleyball teammates, music lessons, All State Choir, school plays, music groups, weddings....and in between all of that several-hours-long coffee dates to just chillax. Sammi has been the most incredible friend over the past almost 20 years and I am so blessed to have her in my life!
