The 12 Days of Christmas Recipes

 Eat-Your-Heart-Out Fudge

I stole this recipe from my friend Michelle this holiday season. Let me just say, this recipe was a hit! It is simple enough and so tasty! I made some for our mailman, garbage man, neighbors, and put it in cute little Christmas tins. Definitely a winner!

Cut a piece of foil big enough to fit inside and up over the edges of an 8x8 baking pan or dish. Place foil in pan and press against bottom, sides, and corners to fit the pan. Set aside until later.

In a large microwaveable bowl, stir 1.5 cups powdered sugar, 1/4 cup milk, 1/4 teaspoons salt.

Add 1/2 cup butter or margarine.

Microwave, uncovered for one minute. Stir. Microwave for 1 1/2 minutes. Stir. Microwave for an additional 1 1/2 minutes or until bubbling. Total cooking time is 4 minutes.

BOWL WILL BE HOT. Use hot pads and place directly on a wooden board or heatproof surface.

Quickly add and stir until melted and blended, 1 package (12 oz) semisweet chocolate chips (2 cups), 3/4 cups peanut butter, 1/2 teaspoon vanilla extract.

Spoon mixture into foil-lined pan or dish. Use the back of a spoon to press mixture into an even layer.

Place in the refrigerator for 2 hours or until firm enough to cut. Peel off foil. Cut fudge into small squares.
